You can use whatever type of yarn you prefer and think with fit the pattern, since it's very flexible, and then use the hook recommended on the yarn. Though i always like to use a smaller hook, since I like it tight ;)
Since this is a small tapestry, I recommend using the floating method* for this piece.

* When you reach the last stitch before your color switch;
Step 1: Yarnover
Step 2: Insert your hook into the stitch
Step 3: Yarn over
Step 4: Pull up a loop
Step 5: Yarn over with the over color, making sure to leave a tail
Step 6: Pull the new color through the two loops on the hook
Step 7: Continue as normal in the next stitch
